Here is a little peak of what I have been working on in Baby Girl’s nursery. There are still plenty of projects that I need to finish up, but getting the mural done was a HUGE check off of the to do list and a giant relief of weight off my shoulders.

Mom Spark as whole “No Brainer” recipe collection. Check them out for easy fast meals or treats for your whole family.
My favorite so far has been (besides, of course, my Corn on the Cob recipe!) Chicken Pancakes. When I made them, I gave them a Tex-Mex twist. I followed the recipe almost exacatly. The only thing different with the actual pancakes was that I seasoned the chicken with chili powder before searing it. What made it Tex-Mex Chicken Pancakes was that I served it with black beans seasoned with cilantro, corn on the cob and topped off the cakes with salsa and plain yogurt (our family’s subsititute for sour cream).
They were delicious. Everyone ate them up. Even M who would live off of mac n cheese if I let him, asked for a second helping.
So if you are looking for something to pair your fast & eay corn on the cob, I would strongly suggest giving the No Brainer: Chicken Pancakes a try too!

My first post is up on MomSpark.

I am super stoked to be helping out Amy at Momspark. It looks like she has rounded up a diverse, yet great group of contributors. I am excited to be working with them. Hopefully, someday, I can make to one of the conferences and meet everyone in person. Until then, I will be lurking on their websites!
