I am positive that in 24 short weeks I will give birth to a tomato. There isn’t much that makes me sick anymore, but the only things that does sound good to eat is food with tomatoes in it. The photo above is a typical lunch for me. A light rye WASA cracker, a little bit of olive oil mayo, half a slice of provolone and a freshly sliced tomato. Yum! Dinner usually includes something with salsa or some sort of red sauce. I have always loved tomatoes, that isn’t new. What is new is my NEED for tomatoes.

My favorite so far has been (besides, of course, my Corn on the Cob recipe!) Chicken Pancakes. When I made them, I gave them a Tex-Mex twist. I followed the recipe almost exacatly. The only thing different with the actual pancakes was that I seasoned the chicken with chili powder before searing it. What made it Tex-Mex Chicken Pancakes was that I served it with black beans seasoned with cilantro, corn on the cob and topped off the cakes with salsa and plain yogurt (our family’s subsititute for sour cream).
They were delicious. Everyone ate them up. Even M who would live off of mac n cheese if I let him, asked for a second helping.
So if you are looking for something to pair your fast & eay corn on the cob, I would strongly suggest giving the No Brainer: Chicken Pancakes a try too!
Indulgence

Last night T and I celebrated our 4th anniversary in style. We dinned at a delicious restaurant in the Twin Cities, Forepaughs. I had the duck which was so spicy that I just had to have a glass of wine to wash it down with. My wine was worth every penny of its over priced 11 dollar price tag.
We got all dolled up, for T that meant normal work wear and for me it meant showering, actually brushing my wavy locks and digging in the back of the closet for a dress that never has a reason to be worn. I wasn’t looking forward to the whole going out prep process, but once I got going, I went all out. It felt so good to look good. I never take the time to get all gussied up and it was well worth it. I felt like I turned heads for all the right reasons, unlike the norm of a toddler throwing a tantrum in the Target isles or my neighbors judging me for wearing the same pair of sweats 3 days in a row.
After stuffing ourselves with tasty yet pricey food we headed to Borders. T informed me that the 4th anniversary is the paper anniversary (which I later wikied and found out he was wrong) so we vowed not to get gifts and instead go to a bookstore sans the kidos and pick up a few books for ourselves. It was fantastic to browse the isles of books without have to push a stroller or chastise the boys for pulling books off shelves.
We lucked out and Borders was have a big sale and offered coupons as well. The night couldn’t have gotten any better, but it did.
We headed to the grocery store to get desert. We both agreed at the restaurant that we would get desert elsewhere and cheesecake was what we needed. We found a Sara Lee New York Style Cheesecake (on sale!) and bought a jar of Hershey’s Dark Hot Fudge. When we got home I paid the babysitter and headed straight upstairs to put on sweats. We paired the cheesecake with a red desert wine and watched the season 3 finale of 24 and the unaired episode of Doll House.
A perfect evening. T even let me sleep in this morning. 4 years. 2 kids. 1 dog. I love that man. I love him for letting me sleep in, for thinking a trip to the bookstore is a great anniversary, for serving the cheesecake whole with 2 forks, for loving me if I am in sweats or a dress and for giving me the greatest years of my life.
Have my cake and eat it two

My 26th birthday cake in all its store bought glory. In my families defense, it is hard to whip up a cake when you are on the road and this extra chocolaty cake was a scrumptious stand in. The picture has a weird red glow because I brought my old camera with and the low light setting isn’t very good on it. In a moment of photography genius I thought, why not turn on the flash and then cover it with my finger to filter the light a bit. The result of my creativity is shown above, a cake that looks like it could be featured in a bloody cheaply made horror flick. The receiver of the cake in said movie would most likely be a voluptuous blonde teen with a low cut shirt that shows off her cleavage while blowing out the candles. In real life, the cake was shared between my parents, my sister and I with heaping scoops on vanilla ice cream while watching reruns of Friends. The cake was so good, I treated myself to a second piece later that night. Yum.
Bloody Genius Mars Company

I don’t know the origins of M&Ms but who ever it was who came up with the name is genius! I must wiki it because someone deserves a round of marketing genius applause!
Now that we have toddlers T and I find ourselves pulling out our inner spell check to spell out words all the time. S-N-A-C-K time yet? B-E-D time? S-E-X tonight?
Recently on a long trip home from the in-laws we were in spell-all mode. The boys were cranky, we were low on snacks (bad rationing on my part)with still a good hour of rush hour city driving left and T and I were needing a pick me up.
All we had left was a half a bag of M&Ms and we knew we had to be sneaky about it. Half a bag of M&Ms split four ways, isn’t going to curb hunger it would just escalate into full blown “NEED MORE!” meltdown.
In my most clever of clever moments, moments after planning the B-A-T-H then B-E-D routine for the evening, I showed T the rolled up half bag of chocolaty goodness and asked, “Wanna split the last of the M-and-M….S-H-I-T! And chaos ensued. The M&Ms ended up only being split 2 ways, just not the way I had planned. My rainbow colored (“melt in your mouth not in your hand” my ass!) boys were smiling contently as we pulled into the garage that night.
So to you, Mr. (because a woman would have thought better) Mars Company Man who named M&Ms M&M, as a mom I shake my fist at you for making motherhood that much harder. As a consumer, I tip my hat. Genius.
Wiki update: I was right, it was a man. Two men in fact.
Craving Comfort

It is a dreary day out, I was feeling guilty about skipping a class at the gym and I was craving some serious comfort food.
I am trying my best to get into shape before we start trying for baby number 3 so I knew I couldn’t go too over board with the comfort.
I opened the fridge and saw what was really my only semi healthy yet still comfort food option.
A Church Lady Sandwich.
I am not sure what a Church Lady Sandwich consists of outside the midwest, but here in the heart land of America a CLS is a staple. Basically a food group all its own. It is simple and classic.
Recipe:
Follow closely.
Butter (none of that margarine crap, real buy by the pound butter) both sides of a store bought bun. Store bought is key. Do you really think Church Ladies have time to bake buns for the entire congregation?
Add a slice or two of whatever deli meat was on sale that week (usually ham or turkey) and a piece of cheese.
Stack it all up and serve with Old Dutch RIP-L Potato Chips from the box.
That my friends is a CLS at its finest!
